Murcia al Vino

From south eastern Spain. This cheese is matured for 45 days before sale and is bathed in local red wine twice during the ripening process.Mild aroma, agreeably acid and a little salty. The name is also whimsically translated as 'Drunken Goat'. Made with pasteurised goats milk.
