Ricotta kebabs

Ingredients for 2 people:

* 300g Ricotta
* 50g green olives
* 2 thick slices home-made bread
* 8 cherry tomatoes
* basil leaves
* lettuce
* 2 tablespoons grated cheese
* salt
* pepper
* oil

Beat the with the oil and some freshly ground pepper.
Add the finely chopped basil and grated cheese and mix well.
Shape the mixture into walnut sized balls.
Thread on wooden kebabs, alternating with the tomatoes, olives and bread cut into cubes and toasted.
Wash and spin dry the lettuce, then dress it and arrange on individual plates.
Serve with the kebabs.
